Nuka-daki is a Kitakyushu local dish certified as a 100-year Food by Japan's Agency for Cultural Affairs. The challenge is not only to preserve the name but to keep it available as something people can actually eat.
A dish locals know
The report's citizen survey shows that nuka-daki is highly recognized as a Kitakyushu food. At the same time, some people have not had a chance to eat it or feel unsure about its appearance or aroma.
Household nuka-doko and succession
Nuka-daki has long been connected with household nuka-doko. Maintaining one at home is not easy, so restaurants that continue serving the dish also help pass the culture on.
Toward the next 100 years
Preserving nuka-daki requires more than recognition. People need chances to eat it, clear explanations for first-time diners, and makers who can keep preparing it.
