ぬか炊き

Nuka-daki is a traditional local dish passed down since the Edo period, where blue fish such as mackerel and sardines are simmered in a traditional 'nuka-doko' (fermented rice bran bed). The rice bran is fermented, and cooking fish in this bed removes the fishy smell characteristic of blue fish, resulting in a soft, flaky texture.

At Ajidokoro Yano, we use our special 'Yano-style nuka-doko' without soy sauce, sake, mirin, or sugar—completely additive-free, making it ideal for health-conscious diners.

Breakfast is simple and gentle, with set meals such as nuka-daki and rice. Lunch focuses on Japanese set meals, including nuka-daki and shio-koji fried chicken. In the evening, the restaurant becomes a fermented-food izakaya where you can enjoy small dishes, fresh fish and drinks at a slower pace.

Can I order alcohol at lunch?

Yes. Beer, highballs, sake and other alcoholic drinks are available during lunch. Many guests enjoy a light drink with nuka-daki or shio-koji fried chicken. Please do not drink alcohol if you will be driving.

Walk-ins are welcome when seats are available, but reservations are recommended on weekends, holidays and event days. You can reserve by phone or through the online reservation links. If you have requests such as counter seats or a course including nuka-daki, please mention them when booking.

Can you host group dinners or private parties?

We can host small gatherings, company dinners and family meals. The restaurant has about 29 seats. Private-use conditions and group capacity depend on the date, so please contact us with your party size and preferred style.

Do you offer course meals or all-you-can-drink plans?

Course meals and all-you-can-drink plans can be arranged depending on the number of guests and your budget. We can include signature dishes such as nuka-daki, seasonal fish and shio-koji fried chicken. Please check the reservation page or ask us when booking.

Cash, credit cards and e-money are accepted. There is no seating charge or cover charge. A small otoshi appetizer may be served to guests ordering drinks without a set meal, and it is provided free of charge.
